I was at Scheel's in Johnstown the other day when my daughter saw the sign for a new restaurant going in next door called "Honolulu Poke Bar." She asked me what poke was (said like the action of poking someone). I had to explain it is actually poke (you pronounce the "e").
That being said, I still didn't really know what poke was, and since we are getting that new restaurant and another in the Front Range Village in Fort Collins, I did some research.
According to People, poke means “to slice or cut” in Hawaiian and refers to chunks of raw, marinated fish — usually tuna — which is then tossed over rice and topped with vegetables and umami-packed sauces.
So basically it is raw fish salad...
Honolulu Poke Bar, which has nearly 40 locations nationwide, expects to open both locations in NoCo in early 2018, within 60 to 90 days.
